The brined feta comes in 16-oz. jars containing approximately ten ounces of cheese, filled to the top with brine (salt water). The feta just gets better with age; 6 months is not an unreasonable expected shelf life. This cheese should be kept refrigerated. If desired, feta may be removed from brine, rinsed under cool water and allowed to drain to remove some of the saltiness.

Split Creek Farm goat feta is in large slices, marinated in olive oil with herbs and sun dried tomatoes. Our feta won Best In Show in national competition in 2005. It is wonderful crumbled on a salad, pizza or omelet. Feta in oil does not need to be refrigerated except for long term storage. It is fine out of refrigeration for 2-3 weeks. We are often asked "is feta goat cheese"? Feta should be a goat cheese but in the USA it is legal to make feta from cow's milk and still call it 'feta'. In Europe, by law, cheese labeled 'feta' can only be made from goat or sheep milk. Try a true goat feta. You'll be surprised at the difference!
