Nutritional InfoThe entire plant is very nutritious, packed with vitamins and minerals, and one of the aldehyde isomers found in Perilla is 2,000 times as sweet as sugar. There are many scientifically proven medicinal uses for Perilla. It has been used for centuries in Oriental medicine as an antiasthmatic, antibacterial, antidote, antimicrobial, antipyretic, antiseptic, antispasmodic, antitussive, aromatic, carminative, diaphoretic, emollient, expectorant, pectoral, restorative, stomachic and tonic
The incredible flavor has been described as curry-like and a combination of cumin, cilantro and parsley with a hint of cinnamon. (Click on Nutritional information to read about medicinal and other uses.)
Sushi is the first thing that comes to mind....This is the red leaf that wraps it all up. In the mint family, perella has antibiotic properties, hence, raw fish is safer because of it. There are other uses, and it tastes good raw on its own. Excellent color in salads, stir-fry, or soups. Looks just like purple basil.
The Shiso Perilla Red (Akashiso), 'Perella frutescens 'crispa', is an intoxicating flavorful herb that should be as popular as basil or cilantro and it also is an attractive bedding plant. Red Shiso Perilla have green leaves that resemble basil except they have sharply serrated edges. Red Shiso is also commonly called Japanese basil/mint. The flavor is milder than Green Shiso.
Red Shiso has edible flowers. Mix or sprinkle over cucumbers, cabbage, fish, soups, rice, and potato dishes. The Shiso is also an excellent container plant. The crushed leaves smell like lemon balm.
